simple shortbread biscuits

For the June newsletter I wrote a piece on activities with your little ones in the winter. One that I thoroughly enjoy doing with my daughter is cooking. Our favourite is to cook shortbread biscuits and use Keely's cooking set to cut out different shapes. We don't use a mixer to combine the ingredients, that is cheating, we prefer to get our hands dirty and then I think they appreciate them so much more. Although how could you not appreciate a biscuit that is basically made from butter and sugar! Thanks to Donna Hay, I am sharing her fabulous recipe with you all to do with your little people or to make for yourself! Enjoy!




Place 180g chopped butter, 3/4 cup caster sugar, 1 cup sifted cornflour, 1 & 1/2 cups sifted plain flour and 1 egg in a food processor and process until a soft dough forms. (this is where we use our hands, more fun)! Press the mixture into a lined shallow 20cm x 30 cm (8 in x 12 in) tin. Score the top of the shortbread into long bars. (you can do what we did and roll out the dough and use cookie cutter shapes). Bake in a pre-headed 160 degree oven for 35-40 minutes or until golden. Cool before eating!

  2. yummo! I know what we are cooking next when we make treats! I have not cooked the double choc chip cookies by Donna Hay yet as I know they will all be in my tummy..... hmm!
